Carrot Cake Sandwich Cookie

All the traditional spices in a chewy cookie made with browned butter and  full of carrots and oats, a touch of toasted walnuts, shredded coconut, and moistened and sweetened with crushed pineapple. Sandwiched with cinnamon cream cheese frosting.
